    Discover the Kohlrabi (Gidra), a unique member of the cabbage family that looks like a space satellite! The edible part is the swollen, turnip-like stem. It has a wonderfully crisp and juicy texture, often compared to a broccoli stem or a crisp apple, and a mild, sweet flavour with a hint of pepperiness. It is a popular vegetable in the Maltese kitchen for its versatility. Kohlrabi is rich in Vitamin C and fibre. It is delicious eaten raw; simply peel it and cut it into sticks for dipping, or shred it into a crunchy, refreshing slaw. It is also fantastic when cooked, as it retains some of its firmness. It is a great addition to Maltese vegetable soups (‘minestra’ or ‘kawlata’) or can be cubed and roasted with other root vegetables.
